Description: A European style Black Lager, halfway between a German Schwarzbier and a Czech Cerny Pivo. Smooth and malty with coffee and raisin flavours. For smoothness, the black malt is prepared separately in a cold water infusion which is added to the kettle.
Malts: Pale, Munich, dark crystal, and black malts
Mash temperature: 66°C
Hopping: 22 IBU, German Magnum and Hallertau
Recommended yeast: Saflager W-34/70 or S-189, Lallemand Nottingham. Safale S-04 can be used for a sweeter finish.
Modifications: Brew undiluted to enhance the flavour. No dry hops needed.
