Kolsch

Description: A Cologne style ale, golden colour, well-bodied and malty. Slightly sweet in the mouth from the warmer mash temperature, but finishing dry from an attenuative yeast. Lightly bittered but late hopping with Hallertau Mittelfruh provides a nice hop flavour and aroma.

Malts: Pilsner and ale

Mash temperature: 67°C

Hopping: 21 IBU, Hallertau Magnum and Hallertau Mittelfruh

Recommended yeast: Safale K-97 or Lallemand Koln, Safale US-05 as a second choice if the others are unavailable

Modifications: As a Kolsch style beer dry hopping is not required. This wort kit can be brewed as a lager with either Safalager W/34-70 or Saflager S-189. Can also be brewed undiluted as a strong lager, in which case dry hop with a gram or two per litre of either Hallertau, Hersbrucker, Saaz or Tettnang.
